# What You'll Need:

01 - 1 lb boneless, skinless chicken breast or thighs, cut into 1-inch cubes
02 - 1 tbsp vegetable oil
03 - 1/2 tsp salt
04 - 1/4 tsp black pepper

05 - 1 medium zucchini, sliced into half-moons
06 - 1 red bell pepper, cut into 1-inch pieces
07 - 1 small yellow onion, sliced
08 - 1 cup mushrooms, sliced
09 - 1 cup broccoli florets

→ Hibachi Sauce

10 - 2 tbsp low-sodium soy sauce or tamari
11 - 1 tbsp sesame oil
12 - 1 tbsp rice vinegar
13 - 1 tbsp honey or sugar
14 - 2 cloves garlic, minced
15 - 1 tsp fresh ginger, grated
16 - 1/2 tsp toasted sesame seeds

→ Garnish

17 - 2 green onions, thinly sliced
18 - Extra sesame seeds

# Directions:

01 - Toss chicken pieces with vegetable oil, salt, and black pepper in a large bowl until evenly coated.
02 - Whisk together soy sauce, sesame oil, rice vinegar, honey, garlic, ginger, and sesame seeds in a separate bowl until well combined.
03 - Add zucchini, bell pepper, onion, mushrooms, and broccoli to the chicken. Pour half the hibachi sauce over the mixture and toss to coat evenly.
04 - Preheat the air fryer to 400°F for 3 minutes.
05 - Place the chicken and vegetables in a single layer in the air fryer basket. Cook in batches if necessary to avoid overcrowding.
06 - Air fry for 10-12 minutes, shaking the basket halfway through cooking, until chicken is cooked through and vegetables are crisp-tender.
07 - Transfer to a serving platter, drizzle with remaining hibachi sauce, and sprinkle with green onions and sesame seeds. Serve immediately with steamed rice or cauliflower rice.
