01 - In a small bowl, mix the goat cheese and cream cheese (if using) until smooth and fully combined.
02 - Spread the goat cheese mixture evenly onto two slices of bread. Drizzle 1 tbsp honey over each slice. If desired, sprinkle with fresh herbs and layer with greens, then top with remaining bread slices to form sandwiches.
03 - Butter the outsides of each sandwich generously, ensuring even coverage.
04 - Heat a skillet or griddle over medium heat until hot but not smoking.
05 - Place the sandwiches butter-side down in the skillet. Cook for 3–4 minutes until golden brown and crispy.
06 - Flip and cook the other side for another 3–4 minutes, pressing gently with a spatula, until golden brown and cheese is melted.
07 - Remove from heat, slice diagonally, and serve immediately while warm.
