Lebanese Lentil Soup Middle Eastern (Printable)

# What You'll Need:

01 - 1 cup brown or green lentils, rinsed

02 - 1 medium onion, finely chopped
03 - 2 cloves garlic, minced
04 - 2 medium carrots, diced
05 - 2 stalks celery, diced
06 - 1 medium potato, peeled and diced
07 - 1 medium tomato, diced or 1/2 cup canned diced tomatoes
08 - 6 cups vegetable broth or water

09 - 2 tablespoons olive oil
10 - 1 teaspoon ground cumin
11 - 1/2 teaspoon ground coriander
12 - 1/2 teaspoon ground turmeric
13 - 1/2 teaspoon ground cinnamon
14 - 1 bay leaf
15 - Salt and pepper to taste

→ Finishing

16 - Juice of 1 lemon
17 - 1/4 cup chopped fresh cilantro or parsley

# Directions:

01 - Heat olive oil in a large soup pot over medium heat. Add chopped onion and sauté for 3 to 4 minutes until translucent.
02 - Add minced garlic, diced carrots, celery, and potato. Sauté for an additional 4 to 5 minutes, stirring occasionally.
03 - Add diced tomato, ground cumin, coriander, turmeric, cinnamon, and bay leaf. Stir and cook for 2 minutes to release the fragrances.
04 - Introduce lentils and pour in the vegetable broth. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 25 to 30 minutes, until lentils and vegetables are fully tender.
05 - Remove the bay leaf. Process part of the soup with an immersion blender for a creamy consistency, or leave it chunky according to preference.
06 - Stir in lemon juice and chopped cilantro or parsley. Season with salt and pepper to taste.
07 - Ladle into bowls and serve hot, with extra lemon wedges if desired.
