01 - Preheat the oven to 350°F and line a 12-cup muffin tin with paper liners or grease lightly.
02 - Cook the bacon in a skillet over medium heat until crisp. Drain on paper towels, then chop into small pieces.
03 - In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
04 - In another bowl, whisk together the milk, eggs, maple syrup, melted butter, and vanilla extract until smooth.
05 - Add the wet ingredients to the dry ingredients and stir until just combined; do not overmix. Gently fold in most of the chopped bacon, reserving a little for the tops.
06 - Divide the batter evenly among the muffin cups. Sprinkle the reserved bacon on top of each muffin.
07 - Bake for 18 to 20 minutes, or until a toothpick inserted into the center comes out clean.
08 - Allow to cool in the pan for 5 minutes, then transfer to a wire rack. Drizzle with maple syrup before serving.
